It starts using a fermentation process just like that used to make beer or wine, and ends with a creamy, rich cream cheese spread that contains dairy, but is free of lactose, gluten, soy, antibiotics and hormones. Because the fermentation process creates only the protein found in milk, (not the lactose normally found in milk), it is naturally lactose free.
